Candy Corn Sprinkle Cinnamon Rolls

The air is crisp and the cider is hot! It's time to celebrate all things sweater-weather, like these decadent and autumn-inspired Candy Corn Sprinkle Cinnamon Rolls. Moist, cinnamon-y rolls tinted the perfect candy corn palette! Let's get corny: 

Candy Corn Sprinkle Cinnamon Rolls

Dough Ingredients:

• 1 cup warm milk (at 115F)

• 2 1/2 teaspoons instant dry yeast

• 2 large eggs, room temperature

• 1/3 cup unsalted butter, melted & cooled

• 1/2 cup granulated sugar

• 1 teaspoon salt

• 4 cups all-purpose flour + 1/2 cup reserved (spooned and levelled)

Harvest Sprinkles!

• GEL food colouring (not liquid), such as Sweetapolita Sweet Orange and Sweetapolita Bright Yellow

Filling Ingredients:

• 1 cup unsalted butter, softened and nearly melted

• 2 cups brown sugar, packed

• 4 tablespoons high quality cinnamon

• 1/2 cup heavy cream, room temperature

• GEL food colouring (not liquid), such as Sweetapolita Sweet Orange

Cream Cheese Frosting Ingredients: 

- 1/2 cup unsalted butter, softened

- 4oz cream cheese, softened

- 1 cup powder sugar

- 1 tsp vanilla extract

- 1 tsp lemon juice (do NOT skip this!)

Cream Cheese Frosting Ingredients: 

- 1/2 cup unsalted butter, softened

- 4oz cream cheese, softened

- 1 cup powder sugar

- 1 tsp vanilla extract

- 1 tsp lemon juice (do NOT skip this!)

Dough Directions:

Step 1: Pour warm milk into the bowl of stander mixer fitted with a paddle attachment and sprinkle the yeast over the milk. Add in eggs, butter, and sugar and mix to combine.

Step 2: Add in salt plus 4 cups of all purpose flour and mix until just barely combined. Let this mixture rest for 5 minutes to give the flour time to absorb the liquid.

Step 3: Remove your paddle attachment and switch to a dough hook then beat the dough on medium speed for 5-8 minutes. If your mixture is not forming a dough, gradually add in reserved 1/2 cup flour one tablespoon at a time.

Step 4: Just before you dough is finished kneading, add in gel food colour and mix until colour is evenly distributed.

Step 5: Grease a large bowl and place dough inside then cover loosely with plastic wrap that has also been greased.

Step 6: Set your bowl in a warm (but not hot) place until it has nearly doubled in size. This takes about 30 minutes but could take longer. Feel free to use the proofing setting on your oven or turn your oven to its lowest setting for just a few minutes, turn it off, then place your bowl inside. Remember, you don’t want it to be TOO hot or it will ruin your dough. Do not allow the dough to exceed doubled size or your rolls will not turn out right.

Step 7: Prepare cinnamon filling by combining all ingredients until they form a paste. Add desired colour. Please note, this is DOUBLE the filling the original recipe called for so you’re welcome to cut it in half if you like less filled rolls.

Step 8: Once your dough has completed its first rise, sprinkle a work surface with flour and roll dough into a rectangle that will be approximately 24x15 inches.

Step 9: Spread the cinnamon filling over the rectangle and roll into a tight log, beginning with the long end (as you would a jelly roll or yule log). Use unflavoured dental floss to slice into rolls. Place rolls into a greased 9x13 inch pan. Loosely cover the pan and allow rolls to rise for about 20 minutes. You CANNOT skip this step. Meanwhile, preheat your oven to 375F.

Step 10. After your rolls have risen, pour the heavy cream over them and bake in preheated oven for 18-25 minutes. Baking time will vary depending on pan type, roll size, and how close rolls are in pan. They should be lightly golden brown with centres that appear cooked through. Note: If your heavy cream is not at room temperature, warm up slightly. It should NOT be hot. Remove from oven and let cool while you prepare cream cheese frosting. 

Cream Cheese Frosting Directions: 

Step 1: Beat together butter and sugar using a stand mixer or electric handheld mixer. Beat until smooth and no lumps remain.

Step 2: Add in powdered sugar, extract, and lemon juice and beat until frosting is light and fluffy.

Spread frosting over cooled rolls, sprinkle with our Harvest Sprinkles (or your favourite sprinkles) and store in an airtight container. Autumn-atically a crowd pleaser!
